A tasty vegetarian appetizer: soup in a paprika.

Directions

  1. Cut a cap from the top of the mini peppers and remove the seeds.
  2. Cut the underside of the peppers straight so that they remain upright.
  3. Fry the shallot, garlic, paprika and tomato into the butter.
  4. Pour in the stock and simmer for 10 minutes.
  5. Puree the soup with half of the basil. Serve the soup in the mini peppers. Sprinkle with basil.
