Finely chop 2 cloves of garlic. Heat the olive oil and fry the onion rings and finely chopped cloves of garlic on a low setting. Let it gently simmer for about 10 minutes.

Quench the wine and boil something. Sprinkle with the flour and stir well. Let it cook for 1 minute. Pour the broth into portions with stirring and simmer for about 3 minutes. Season with salt, pepper and thyme.

Heat the oven grill and toast the baguette briefly under the grill. Halve the remaining clove of garlic and rub the bread with it. Brush the bread with the mustard and place the slices of brie on it.

Spoon the soup into ovenproof bowls. Put the slice of baguette on it and let the cheese melt under the grill.
