Cut the tomato into small pieces. Cut the spring onion into rings.

Remove the seed list and cut the red pepper into thin strips and mix with the tomato and the spring onion. Season with salt and pepper.

Well the couscous for about 4 minutes in 150 ml of cold water.

Slice the parsley and mint leaves and cut the lettuce into strips.

Mix the couscous through the tomato-forest mixture and add the parsley, the fresh mint and the lettuce. Season to taste with lemon juice, oil and salt to taste.

The salad should be juicy and fresh. Serve immediately.
