Frittata of pasta, paprika and Italian herbs.

Directions

  1. Preheat the oven grill to the highest setting.
  2. Halve the peppers. Remove the seeds and cut the flesh into cubes of 1 x 1 cm (brunoise).
  3. Slice the garlic. Chop the onion.
  4. Heat the oil in the frying pan and fry the onion and garlic for 1 min.
  5. Add the peppers and herbs and cook over medium heat for 4 minutes. Change regularly.
  6. Meanwhile, in a bowl, beat the eggs with the cheese.
  7. Put in the pasta and the pepper mixture and season with salt and pepper.
  8. Put the pasta mixture back in the pan and fry the frittata for 10 minutes on medium heat with the lid on the pan.
  9. Sprinkle with the cheese and place the pan under the grill for 3 minutes until the cheese has melted.
