Cook the pappardelle in plenty of water with salt al dente. Drain and rinse well with cold water so that the pasta will not stick together.

Cut the cucumber in the length and scrape the halves into thin slices.

Mix the cucumber and radishes in a bowl with the pastels, oil, vinegar, trout and parsley and season with salt and freshly ground pepper.
