Pasta salad with smoked salmon and watermelon

Boil the penne in a pan with plenty of boiling water with salt in 10-12 minutes until al dente. Squeeze the lemon. Chop the basil coarsely. Cut the watermelon into slices 2-3 cm thick, cut the flesh out of the shell and then into cubes. Beat in a bowl of lemon juice with olive oil and some salt and pepper to a dressing.

Spoon the pasta with watermelon and basil through the dressing. Season with salt and pepper. Spread the arugula over the plates and put the pasta salad in the middle. Place the slices of salmon around the salad and in the middle scoop a generous amount of hüttenkäse.
