Pasta salad with tomato and mozzarella
Salad of shell paste with mozzarella, tomato, spring onion and fresh basil.
Cook the pasta according to the instructions on the package.
Slice the garlic and pick the leaves of the basil.
Puree the half of the basil with the garlic, lemon juice, oil and water into a dressing with the blender or hand blender.
Add pepper and salt to taste.
Drain the pasta and mix immediately in a bowl with the dressing, allow to cool for at least 20 minutes.
Tear the rest of the basil into pieces. Cut the spring onion into rings and the tomatoes in four.
Scoop the spring onion, tomato, mozzarella and basil into the salad just before serving. Season with salt and pepper.
