Mediterranean summer salad with raspberry dressing

Puree the raspberries with the oil, vinegar and sugar with the hand blender. Dilute the dressing with the water and season with (freshly ground) salt and pepper.

Heat the oil in a frying pan and fry the bacon strips until crispy. Let them drain on kitchen paper.

Slice the baguette at an angle into slices and toast the crispy crisp in the toaster. Cut the brie into slices and the onion into rings.

Mix ¾ of the dressing by the arugula. Put the prepared rocket on plates and divide the brie, bacon strips, red onion, olives and the raspberries over it.

Sprinkle the rest of the dressing over the salad. Serve baguettes with the slices of bread.
