Pasta with spicy zucchini and cashew nuts
Shellfish pasta with red onion, zucchini, fresh thyme, garlic, lemon and salted cashew nuts.

Cook the pasta al dente according to the instructions on the package. Chop the onion, cut the zucchini into cubes, the garlic into slices and stir the sprigs of the thyme. Heat the oil in a stirring fruit the onion on low heat glassy.

Add the zucchini and garlic and stir-fry on medium heat in 5 minutes until al dente.

Squeeze the lemon and collect the juice. Mix the thyme leaves with the lemon juice and add this to the onion-zucchini mixture. Season to taste with pepper and salt. Drain the pasta and scoop the zucchini mixture through.

Roast the cashew nuts in a hot, dry frying pan until they are crunchy and golden brown. Sprinkle the nuts over the pasta.
