Pasta with strawberries and smoked chicken
Penne with pistachio nuts, strawberries, smoked chicken breast, risotto, basil, mint.

Cook the penne in water with salt according to the instructions on the package.

Meanwhile, roughly chop the pistachio nuts. Grate the yellow skin of the lemon and press out half of the fruit.

Remove the crowns from the strawberries and cut the fruit in half lengthwise.

Cut the chicken fillet into slices and the slices into thin strips.

Cut the leaves of the basil and the fresh mint into strips.

Mix the lemon zest, juice, ricotta, basil and fresh mint into a sauce. Season with pepper and salt.

Drain the pasta, but collect 250 ml of cooking liquid. Mix the pasta with the sauce, the cooking liquid and the chicken strips.

Garnish with the strawberries and pistachios.
