Preheat the oven to 190ºC.

Cut off the lids from the pie shells and keep separate. Place the trays on a griddle or baking tray and heat in the middle of the oven for about 6 minutes.

Heat the oil and fry the mushrooms for 3-4 minutes. Add the mustard halfway through the baking time.

Melt the butter in a saucepan and fry the shallots for 2-3 minutes. Add the flour, stir well and cook for about 2 minutes.

Pour in little bit the stock and the cream and stir until a thick sauce is created. Season the mushrooms and sage and season with salt and pepper. If the sauce is too thick, add a dash of sherry or port.

Fill the pies with the mixture and put the lids on it.
