Grate the peel of 1 orange. Peel the oranges and cut segments from the membranes.

Cook the snow peas for 3 minutes with salt. Drain and rinse cold water.

Heat the olive oil and fry the onion for 1-2 minutes. Extinguish with sherry or white wine.

Mix the crème fraîche with orange zest, honey and half of the mint.

Spoon the snow peas through the spring onions and heat. Add the orange wedges.

Serve the snow peas sprinkled with the rest of the fresh mint and the crème fraîche.
