Finely chop the garlic and red pepper. Grate the ginger.

Cut the peaches into 4 parts each and pull off the skin with a pointed knife. Cut the flesh into cubes and put them in the blender with the oregano. Pour in the beer and puree everything into a smooth sauce.

Heat the oil in a pan and gently fry the garlic, ginger and red pepper. Stir in the peach sauce with mustard and sugar and bring everything to the boil while stirring. Simmer gently for 15-20 minutes until it becomes a nice, creamy sauce. Season with salt and pepper.

Put the sauce in a bowl and let it cool. Tasty with meat, chicken and fish dishes.
