Peas-lime mint puree with goat's cheese and raw ham

Heat the oven grill. Cook the peas for 5-7 minutes and drain them.

Place the slices of ham and goat cheese side by side on the baking sheet and pour a little olive oil over the goat's cheese. Do not roast too close under the grill until the ham is crispy and the goat's cheese is lightly browned.

Puree the peas with the crème fraîche, lime juice, fresh mint and salt and pepper. Add a trickle of olive oil until a smooth puree is formed.

Serve the goat's cheese on a scoop of peas puree. Sprinkle with the thyme and lay the roasted ham on it.

Mix the salad with the dressing and to and serve this salad.
