Cook the penne al dente according to the instructions on the package.

Cut the garlic into slices. Halve the pepper in the length, remove the seeds with a sharp knife and finely chop the flesh.

Heat the olive oil in a frying pan and fry the garlic and pepper over low heat until the garlic starts to color.

Add the peeled tomatoes and Italian herbs. Season with salt and pepper. Bring everything to the boil while stirring.

Stir in the tomato puree and fry for 1 min.

Stir in the tomatoes so that they are well distributed through the sauce. Let the sauce simmer for 10-15 minutes on low heat.

Drain the pasta and stir in the tomato sauce. Serve in deep plates and drop some olive oil.
