Penne with peppers, leeks and mackerel
A tasty recipe. The main course contains the following ingredients: fish, penne rigate (pasta, bag 500 g), mackerel fillets (with garlic and herbs in olive oil (a 125 g)), onions (chopped), leeks (in oblique rings), green peppers (in cubes) and tomato cubes (400 g).

Cook the penne al dente according to the instructions on the package. Drain the mackerel fillets and collect the herb oil.

Heat 3 tbsp of the herb oil in a stirring fruit the onion glassy in 3 min. Add the leeks and peppers and stir fry 3 min. Add the tomato cubes and bring the sauce to the boil. Season with salt and pepper. Heat the rest of the herb oil with the pieces of mackerel in a small frying pan or saucepan with a thick bottom, but do not let it bake.

Divide the pasta over 4 plates. Spoon the stir fry mixture on top and divide the warm mackerel pieces over it.
