Penne with pumpkin
A tasty Italian recipe. The main course contains the following ingredients: pumpkin (peeled), garlic (peeled), penne (wholegrain), olive oil (with chili pepper), onions (finely chopped), rosemary (finely chopped), walnuts (coarsely chopped) and grated (Parmesan cheese).

Cut the pumpkin into large blocks and cook them together with the garlic in plenty of boiling water with salt in approx. 15 min. Drain the pumpkin into a sieve. Spoon half the pumpkin into the food processor or high narrow bowl and mash the pumpkin in the machine or with the hand blender.

Spoon the other half on a plank and chop it fairly coarsely.

Boil the penne according to the instructions on the package.

In the meantime, heat the oil in a frying pan and fry the onion for about 5 minutes. Add the pumpkin puree, rosemary and a few tablespoons of the cooking liquid from the pasta and gently heat it. Add salt and pepper to taste.

Spoon a few tablespoons of the cooking liquid into a bowl and pour the pasta into a colander. Stir the pasta through the pumpkin. If necessary, add a little bit of cooking liquid to make it slightly looser.

Divide the pasta over 4 deep plates and sprinkle the nuts over it. Give the cheese separately. Tasty with coarsely chopped arugula.
