Penne with shrimps and spinach

Cross the tomatoes. Put them in boiling water for a few seconds, clean them and cut them into wedges or slices.

Mix the tomato slices with half of the olive oil, half of the balsamic vinegar, 1 clove of crushed garlic and 2 tablespoons chopped basil.

Cook the pasta al dente. Meanwhile, heat the rest of the olive oil in a wok or skillet. Put 2 pressed cloves of garlic and add the shrimps. Stir fry 2 minutes. Remove the shrimps from the pan and keep them warm.

Put the rest of the balsamic vinegar and the spinach in the shortening and stir-fry 2-3 minutes until the spinach has shrunk. Add salt and pepper.

Scoop the shrimp and the tomato mixture through. Mix the shrimp spinach mixture through the pasta and serve the dish sprinkled with crumbled ricotta or mozzarella, Parmesan cheese and basil. Garnish with lemon.
