Penne with vegetable sauce, chorizo and shrimps

Bring a generous pot of water to the boil. Cut the chorizo into strips. Clean the shallot and garlic.

Slice the shallot in half rings and the garlic fine. Heat the oil in a frying pan and fry the chorizo, shallot, garlic and paprika for 5 minutes on low heat.

Meanwhile, wash the peppers, remove the stalk and seeds and cut the flesh into thin strips.

Fry 3 minutes on low heat with the chorizo. Add the vegetable sauce, bring to the boil and heat for 5 minutes on low heat. Add the shrimp the last minute.

Meanwhile, when the water is boiling, add the pasta to the pan and cook for 10 minutes until al dente. Clean the lemon and grate the yellow skin of half a fruit.

Cut 1 half into segments. Slice the parsley.

Drain the pasta and mix with 2/3 of the parsley through the sauce. Spread over 2 deep plates, sprinkle with the rest of the parsley, the lemon zest and put a lemon on it.
