Preheat oven to 200 ° C. Peel shallot and finely. Clean lemon and grate half of skin finely. Cut crusts of bread and grind to crumble in food processor. Cut the parsley over it fine, sprigs of thyme.

Mix shallot, lemon zest, egg and milk with crumb. Rub chicken belly from chicken dry with kitchen paper. Fill chicken with mixture. Close cavity with cocktail stick. Grease baking dish with half of butter. Let the rest of butter melt in the microwave.

Grind black pepper generously over melted butter. Brush the outside of chicken with pepper butter. Place chicken in oven dish and bake in the middle of oven in about 1 hour and 20 minutes until golden brown and done. Sprinkle chicken with sea salt ten minutes before the end of frying time.

Serve chicken on a hot plate. Tasty with baked potatoes and green beans.
