Grate the ginger. Heat the oil in a frying pan and fry the ginger, potatoes and curry madras for 5 minutes on a high heat. Change regularly.

Meanwhile cut the turkey fillet into thin strips.

Add the turkey to the potatoes and cook for 3 minutes on medium heat. Season with pepper and salt.

Meanwhile, cook the frozen cauliflower florets for 4 minutes in boiling water. Add the snow peas last minute.

Drain the cauliflower and snow peas and add to the potato-turkey mixture. Stir fry for 2 min.

Slice the coriander. Sprinkle the potatoes, cauliflower and turkey with coriander and serve.
