Keep 4 chestnut mushrooms and 4 oyster mushrooms separately. Finely chop the rest of the mushrooms.

Preheat the oven to 180 degrees. Sprinkle the meat with salt and freshly ground pepper. Heat the oil and 40 grams butter and fry the meat in 2 minutes per side around brown. Take it out of the pan and put it on a baking tray in the oven.

Fry the chopped mushrooms, onion, bell pepper and chopped rosemary or thyme for about 2 minutes in the shortening.

Spoon a layer on the pork stews and put in the oven for about 10 minutes.

Meanwhile, fry the whole mushrooms in the rest of the butter.

Serve the pork stews with the rest of the mushrooms around it and garnish with a sprig of rosemary or thyme.

Delicious with haricots verts and potatoes or red potatoes.
