Store the bread rolls in a container in the freezer until later use. Also freeze a few blueberries.

Put the glasses in the freezer beforehand for a nice 'iced' effect.

Place the bread roll ice cream in the glasses just before serving and sprinkle with a few berries.

Pour over the iced (pink) cava and serve the pink velvet immediately.
