Directions

  1. Let the gelatin soak in cold water. In the meantime, heat the lemon juice with 2 tablespoons of water.
  2. Squeeze out the gelatine and let it stir into the warm lemon juice while stirring. Do not let it boil.
  3. Remove from the heat source and allow to cool slightly while stirring.
  4. Keep 1/3 of the best fruits apart and puree the rest with a hand blender.
  5. Beat the mashed fruits and the cooled gelatin mixture with a whisk well through the yoghurt.
  6. Beat the egg whites with an electric mixer and add the sugar. Beat until shiny stiff peaks.
  7. Spoon the egg whites into the yogurt until everything is well distributed and airy.
  8. Transfer to 4 dishes and leave covered in the refrigerator covered. Serve with the rest of the fruits.
