Cut the pita bread open horizontally.

Mix the mackerel fillet with Provençal herbs and mayonnaise or halvanaise.

Sprinkle one half of the roll with grated, young cheese.

Spread the mackerel over it, sprinkle again grated cheese and cover with the other half of the bread.

Fry the bun in a grill pan or frying pan on both sides until light brown.
