Pizza with sweet potato and gorgonzola

Preheat the oven to 200ºC. Roll out the pizza dough on the baking trays. Scrape the sweet potatoes with a cheese slicer into thin slices, spread over the dough and brush with oil.

Sprinkle with the rosemary, salt and pepper and fry the pizzas for about 20 minutes in the oven.

Meanwhile, make the salad. Roast the hazelnuts until golden brown in a dry, hot frying pan.

Beat the mustard with the honey and vinegar and then beat the oil through it. Scoop the hazelnuts and onion rings through.

Remove the pizzas from the oven and crumble the gorgonzola above it. Bake the pizzas for another 5 minutes.

Mix the spinach with the dressing and season with salt and pepper. Serve the salad with the pizza with sweet potato.
