Tough vegetable skewers
Vegetable skewers with mushroom, tomato, zucchini, eggplant and peppers.

Clean the peppers and cut each into 8 pieces. Cut the zucchini into long slices and the eggplant into pieces.

In a large bowl, beat the oil together with the vinegar and the salt. Press the garlic above it.

Stir in the mushrooms, peppers, zucchini, eggplant, tomatoes and bay leaves.

Cover the bowl and marinate the vegetables for about 1 hour. Scoop occasionally.

Soak the dried tomatoes for 15 minutes in hot water, rinse and pat dry.

Thread alternately the mushrooms, bay leaves, paprika, zucchini, eggplant and dried tomatoes on the pens.

Keep the skewers and the remaining marinade in the refrigerator until use.

Brush the skewers with the marinade and grill in approx. 12 minutes until tender and brown. Turn the skewers a quarter turn every 3 min.
