Plate pizza with eggplant, goat cheese and balsamic vinegar

Preheat the oven to 200ºC. Prepare the pizza dough according to the instructions on the packaging.

Cut the aubergine into slices and brush around with olive oil. Heat a grill pan and grill the eggplant slices on both sides.

Roll out the pizza dough thinly and place it on the baking tray. Mix the sieved tomatoes with the garlic and oregano and brush the bottom with them.

Divide the slices of eggplant over the pizza, crumble the goat cheese and cook the pizza in the middle of the oven for about 20 minutes.

Remove from the oven and spread some arugula over it. Sprinkle with balsamic vinegar and olive oil and serve immediately.
