Poached plaice fillet with herb dressing
Plaice fillet with a dressing of mint, basil and white wine vinegar.

Remove the leaves of the basil and the fresh mint and cut finely. Mix with vinegar and oil in a bowl.

Squeeze the garlic on top and beat until a dressing. Season with salt and pepper.

Prepare the mashed potatoes in the microwave according to the instructions on the packaging.

Meanwhile, bring the water, bouillon tablet and white wine to a boil in a frying pan and turn down the heat.

Put the plaice fillets in and poach against the boil in 5 minutes until tender. Meanwhile, cook the snow peas in 4 minutes.

Divide the snow peas with the mashed potatoes over the plates. Carefully remove the plaice with a slotted spoon and place on the snow peas.

Drizzle with the herb dressing and serve.
