Preheat the oven to 200 ° C.

Cut the zucchini into small cubes (brunoise) and chop the onion.

Heat the oil in a frying pan and fry the onion for 1 min. Add the zucchini and cook for 3-4 min. Until the zucchini is soft.

Crumble the goat's cheese and add pepper and salt. Remove the pan from the heat.

Place the slices of filo pastry on a work surface and cut them over the width into three bars of equal size.

Cover the filo pastry you are not working with with a damp cloth to prevent dehydration.

Brush the edges of a bar of dough thinly with some oil. Spoon 1 tbsp of the zucchini mixture on a small side of a bar.

Fold the sides over the filling and roll up the bar of dough. Stick the edge with a little oil. Make the rest of the rolls as well.

Place the rolls on a griddle covered with parchment paper and brush the top with a little oil.

Bake the rolls in the oven in about 20 minutes until golden brown and crispy.

Remove from the oven and allow to cool to lukewarm. Yummy! .
