Pork roulade with onion sauce

Preheat the oven to 170 ºC.

Ris the leaves of the sprigs from the Italian spice mix. Rub the herbs, garlic and salt into the mortar. Mix in the oil.

Heat the oil and fry the roulade over medium heat in 5 minutes. Place in the baking dish, brush with the spice paste and bake for about 50 minutes in the oven.

Leave to rest for 10 minutes under aluminum foil outside the oven.

In the meantime, cut the onion into rings. Heat the butter in a frying pan and fry the onion with salt and pepper for 20 minutes on low heat.

Allow 10 minutes to caramelize on medium heat. Stir frequently but not too much.

Meanwhile, peel the apple, remove the core and cut the apple into pieces.

When the onion is golden brown, add the apple and the apple juice. Let boil for 7 minutes. Season with salt and pepper.

Cut the roulade into slices and serve with the onion sauce.
