Pork tenderloin skewers with red pepper and peanuts

Directions

Soak wooden sticks in water to prevent burning during roasting.

Rub the onion, red pepper, honey and ginger powder into a mortar or puree with a hand blender.

Mix in 2 tablespoons of oil and scoop the meat through this marinade. Allow to marinate for at least 15 minutes.

Thread the meat on the skewers.

Heat a grill pan or oven grill and roast the meat in 6-8 minutes around brown and done. Brush in between with the rest of the oil.

Sprinkle the skewers with the peanuts.

Tasty with a cucumber salad with red pepper and onion.
