Pork tenderloin skewers with red pepper and peanuts

Directions

  1. Soak wooden sticks in water to prevent burning during roasting.
  2. Rub the onion, red pepper, honey and ginger powder into a mortar or puree with a hand blender.
  3. Mix in 2 tablespoons of oil and scoop the meat through this marinade. Allow to marinate for at least 15 minutes.
  4. Thread the meat on the skewers.
  5. Heat a grill pan or oven grill and roast the meat in 6-8 minutes around brown and done. Brush in between with the rest of the oil.
  6. Sprinkle the skewers with the peanuts.
  7. Tasty with a cucumber salad with red pepper and onion.
