Potato cookies with smoked chicken fillet

Beat the egg with the cream. Mix in the spring onion, salt and pepper.

Stir in the potato powder, flour and baking powder. Add the vinegar and stir quickly through it.

Heat olive oil in a large frying pan. Fry a cookie from a full tablespoon of batter on both sides until golden brown. Bake several more at the same time.

Put a teaspoon of crème fraîche on each potato biscuit. Divide the chicken breast slices over it and garnish with a sprig of dill.
