Directions

  1. Let the meat come to room temperature. Heat the oil or butter in the frying pan. Fry the pork tenderloin around brown and take it out of the pan.
  2. Fry the onion in the frying fat glassy and let the garlic grout briefly. Add the mustard and the tarragon.
  3. Deglaze with the wine or apple juice and stir in the crème fraîche. If desired, further season the sauce with salt and pepper.
  4. Put the pork tenderloin back in the pan and leave to simmer with the lid on the pan over low heat for about 15 minutes.
  5. Tasty with mashed potatoes, boiled potatoes or potato biscuits.
