Cut the tomatoes into pieces, the onions into thin pieces, the cloves of garlic into slices and chop the parsley. Divide tomato, onion, garlic and parsley in the frying pan, insert the bay leaves in between. Sprinkle some (sea) salt and freshly ground pepper and drizzle with 3 tablespoons of olive oil. Heat the whole for 6-8 minutes on medium heat until it starts to become a sauce.

Meanwhile, cut the cod and pangasius into coarse pieces. Peel and slice the potatoes into wafer-thin slices. Place the cod, pangasius and shrimps in the sauce and cover with potato slices. Sprinkle some salt and pepper and drizzle some olive oil over it.

Put the lid on the pan and cook everything gently for 20-25 minutes. Place the slices of bread in deep plates and scoop the vegetables and fish with the cooking liquid.
