Potato leek soup with warm smoked salmon


Meal soup of onion, crisp potatoes, leeks, warm smoked salmon and chives.

Directions

  1. Chop the onion. Peel the potatoes and cut them into cubes of 1 cm. Wash the leeks and cut into thin rings.
  2. Heat the oil in a large pan and fry the onion 3 min. Add the potato and the leeks and fruit for 2 minutes.
  3. Add the stock and the water.
  4. Bring to the boil and simmer for 15 minutes on low heat. Puree the soup with the hand blender and season with salt and pepper.
  5. Cut the chives finely and divide the salmon into large pieces. Divide the soup over the bowls and spread the salmon over it. Sprinkle with the chives.
