Potato salad on its italian


Summer dish with potatoes, green beans, capers, Italian herbs, mozzarella, red onion and anchovy fillets.

Directions

  1. Clean the potatoes. Boil the potatoes in water with salt in 20 minutes until done. Cut them into slices when they are still warm.
  2. In the meantime, remove the stalk and the tip of the green beans and break them in the middle. Cook the green beans in water with salt in 8 minutes until al dente. Drain and rinse cold under running water.
  3. Mix 1 tbsp of the liquid from the jar of capers with the oil and Italian herbs and pour this over the potato slices.
  4. Cut the mozzarella into cubes. Cut the onion into thin rings. Cut the anchovy fillets into pieces. Mix the potatoes with the green beans, mozzarella, onion, capers and anchovies.
