- 
                                Peel the potatoes and cut them into cubes of 1 x 1 cm (brunoise). Boil in water with salt in 15 min. Until done. Drain and let cool.
- 
                                Meanwhile, let the herring drain in a colander and collect the moisture. Cut into long strips. Peel the beetroot and cut into cubes of 1 x 1 cm.
- 
                                Also cut the unpeeled apple into cubes of 1 x 1 cm. Ris the dill from the twigs and cut roughly.
- 
                                For the dressing, mix the crème fraîche, horseradish, half of the dill and 3 tbsp of the herring fluid.
- 
                                Season with (freshly ground) pepper and possibly salt.
- 
                                Cut the spring onion into thin rings. Mix the potato, beet, apple and half of the spring onion with the dressing and scoop on a bowl.
- 
                                Spread the herring over it and sprinkle with the rest of the spring onion and dill.
