Potato salad with beet and sour herring

Directions

  1. Peel the potatoes and cut them into cubes of 1 x 1 cm (brunoise). Boil in water with salt in 15 min. Until done. Drain and let cool.
  2. Meanwhile, let the herring drain in a colander and collect the moisture. Cut into long strips. Peel the beetroot and cut into cubes of 1 x 1 cm.
  3. Also cut the unpeeled apple into cubes of 1 x 1 cm. Ris the dill from the twigs and cut roughly.
  4. For the dressing, mix the crème fraîche, horseradish, half of the dill and 3 tbsp of the herring fluid.
  5. Season with (freshly ground) pepper and possibly salt.
  6. Cut the spring onion into thin rings. Mix the potato, beet, apple and half of the spring onion with the dressing and scoop on a bowl.
  7. Spread the herring over it and sprinkle with the rest of the spring onion and dill.
