Potato salad with capers and parsley


Salad of carisma potatoes, garlic, onion, capers, chili, celery, flat parsley

Directions

  1. Peel the potatoes, cut into pieces and boil for 12 minutes until al dente. Drain and leave the potatoes with the lid on the pan for another 5 minutes.
  2. In the meantime, cut the garlic finely. Chop the onion.
  3. Mix the oil with the garlic, onion, capers and chilli flakes and heat in a small pan over low heat. Remove the pan from the heat.
  4. Cut the celery into thin loops. Slice the parsley. Grate the yellow skin of the lemon and press.
  5. Spoon the potatoes with the lemon zest, half of the lemon juice and the rest of the ingredients in a large bowl.
  6. Season the salad with sea salt and serve it lukewarm.
