Potato tortilla with parsley and caramelised onion


A tasty Spanish recipe. The vegetarian side dish contains the following ingredients: onions (in rings), potatoes (peeled and diced), eggs, parsley (chopped) and oil.

Directions

  1. Heat 3 tablespoons of oil in a thick-bottomed pan and simmer the onions in low heat for 20 minutes and lightly brown.
  2. Meanwhile, cook the potato cubes for 8 minutes and let them evaporate in a colander.
  3. Beat the eggs and add pepper, salt and parsley and stir in the potato cubes.
  4. Let this mixture stand for another quarter of an hour.
  5. Heat the rest of the oil in a large frying pan.
  6. Spoon half of the potato egg mixture into the pan, divide the caramelised onion rings into an even layer and scoop the rest of the potato egg mixture on top.
  7. Place a lid on the pan and let the tortilla slowly harden on low heat for 20 minutes.
  8. Then carefully slide on a plate and serve hot or cold.
  9. Nice with mustard..
