Couscous salad with orange
Vegetarian couscous salad with raisin, oranges, pine nuts, garlic, cumin and mint.

Scoop the couscous and raisins into a bowl. Pour the water again and let the couscous heat for about 10 minutes. Grate the peel of half the oranges. Press all oranges.

Heat in a wok3 tbsp oil and fry the pine nuts until golden brown. Put them on a plate. Fry the garlic with cinnamon and cumin in shortening. Beat in a large bowl dressing of the orange zest, the rest of the oil and the garlic mixture.

Disconnect the couscous mixture with a fork and pour a dressing through it. Season to taste with salt. Leave the couscous salad at room temperature for at least half an hour. Finely chop the fresh fresh mint.

Spoon the couscous salad. Put in the pine nuts and fresh mint.
