Heat the oil in a large pan and fry the onion until it is light brown and sticky.

Add the garlic and fruit for a few more minutes.

Add the tomato paste and tomatoes and cook on a high setting until the tomatoes are softer.

Add the herbs and the fond and let it simmer for about 30 minutes on a low setting. The longer the soup can simmer, the more intense and sweeter the tomato flavor becomes.

Remove the oregano and bay leaves and puree the soup with a hand blender.

If necessary, further season with salt and pepper.

Bake the cubes of salami in a dry, hot frying pan in a few minutes.

Add the vegetables and fruit for a few more minutes.

Stir in the salami and vegetables and warm for another 5 minutes.
