Cook the potatoes with salt until done. Add the leeks for the last 5 minutes.

In the meantime, heat the butter. Sprinkle the croquettes with salt and pepper and fry them around brown in the butter.

Drain the potatoes and leeks, collect the cooking liquid.

Do not crush the potatoes and leeks too well with the oil and possibly some of the cooking liquid.

Spoon the apple cubes and curry powder through the stew. Serve with the croquette and onion gravy.
