Provencal farmers omelette
Vegetarian provençal farmers omelet with potato and stir-fry vegetables. Served with a salad.

Heat the oil in a large frying pan with non-stick coating. Add the potatoes and fry for about 5 minutes. Add the stir-fry vegetables and cook for approx. 3 minutes.

Beat the eggs in a bowl with the milk, pepper and salt. Pour the egg mixture into the potato-vegetable mixture. Allow the egg to solidify in about 20 minutes on medium heat.

Wash the apple, cut in four, remove the core and cut into slices. Mix the apple with the lamb's lettuce and the dressing. Serve the omelet with the salad.
