Preheat oven to 200ºC.

Prick holes in the middle of each slice of puff pastry. Spread the feta and paprika over it and bake for about 15 minutes in the oven.

Meanwhile, roast the pine nuts in a dry, hot frying pan until golden brown.

Mix the olive oil and the vinegar through the lamb's lettuce and season with salt and pepper. Divide the lettuce over the tarts and garnish with the pine nuts.
