Prick the peel of the sweet potatoes. Place the potatoes in a circle on a plate or microwave dish and puff them for approximately 10 minutes in the microwave (800 Watt). Turn them around halfway.

Leave the potatoes outside the microwave for a while. Dab the shrimps dry.

Heat the olive oil with the garlic and stir-fry in the shrimp with the red pepper for 3-4 minutes.

Heat the beans with the taco sauce.

Halve the potatoes lengthwise to pieces, hollow them out and fill them with the beans and shrimps. Sprinkle with the coriander and serve with the sour cream.
