Italian bread soup with grilled zucchini
A tasty Italian recipe. The starter contains the following ingredients: meat, olive oil, onion (finely chopped), garlic (squeezed), tomatoes on the vine (ground and finely chopped), fresh Italian herbs ((a 20 g), finely chopped), meat bouillon tablets (crumbled), zucchini (in slices ), coarse wholemeal bread, spicy cheese ((eg grana padano) and freshly grated).
- 4 el olive oil
- 1 little onion finely shredded
- 1 clove garlic pressed out
- 3 ripe vine tomatoes grazed and finely cut
- Bag fresh Italian herbs (a 20 g), chopped finely
- 2 meat bouillon tablets crumbled
- 150 g zucchini in slices
- 4 slices coarse wholemeal bread
- 50 g spicy cheese (eg grana padano), freshly grated
Heat 2 tbsp oil in large saucepan.
Onion for 3 min.
Bake gently without letting it color.
Rub garlic for 1 min.
Add tomatoes and herbs and mix gently for about 3 minutes, stirring regularly.
Add bouillon tablets and 1 liter of water and gently simmer soup for 5 min.
Meanwhile, preheat grill pan to piping hot.
Spread the courgette slices with 1 tbsp oil and roast in a grill for 2 min.
With a nice stripe pattern, slices halfway around.
Toasting bread in toaster.
Slice drops with 1 tbsp oil and cut into cubes.
Spread cubes of bread and zucchini on four plates.
Hot flavoring to taste with pepper and on bread and zucchini scoops.
Sprinkle cheese over it..
