Puffed sweet potato with tomato salsa and feta

Preheat the oven to 200ºC.

Prick the sweet potatoes with a fork and put them on the baking tray. Puff the sweet potatoes in the oven for about 50 minutes in their skins.

In the meantime, mix the tomatoes with the onion, capers, lime juice, olive oil and oregano and season with salt and pepper.

Remove the potatoes from the oven and let them cool down a bit. Cut them open lengthwise and add some of the tomato salsa.

Crumble some feta over it and sprinkle with the coriander. Tasty with grilled (white) fish.
