Directions

  1. Heat the oil in a large pan and fry the onion, garlic, ginger and turmeric 2-3 minutes. Add the curry and fry for 1-2 minutes.
  2. Spoon the pumpkin, coconut milk, stock, tomatoes, soy sauce and cayenne pepper and cook covered gently for about 20 minutes.
  3. Mix in the lentils and peas and cook for another 3-4 minutes. Sprinkle the curry with the coriander. Tasty with flat bread.
