Chop the nuts coarsely. Preheat the oven to 225 ° c. Cut the pumpkin into 3-4 cm wide parts and remove the seeds and wires. In a saucepan, beat the wine, syrup, biscuits, thyme and some salt together. Boil this mixture gently for 5 minutes. Stir in the olive oil.

Place the pumpkin parts upright on the baking tray. Pour half or three quarters of the wine mixture. Sprinkle the nuts over it.

Roast the pumpkin in the middle of the oven in 25 minutes. Serve the pumpkin parts with quinoa and a green autumnal salad. Serve the rest of the sauce in a container.
